brunch for one

sometimes a girl has to have brunch.
even if it is a solo brunch.
this has been my meal of choice lately. i get beatrix fed in the morning. and then shortly after, penelope. i get pips down for her morning nap and while bea is watching thomas or little einstein or even george i make this delicious blend of ethnic flavors. it is my take on several things that i have tasted while living in south florida.
if you haven't ever had fried plantains or tostones you need to get to your store today and purchase a green plantain and try to make them yourself.
they are AMAZING! and surprisingly easy.
i have also been loving an easier variation of huevos racheros, which is simply eggs poached in tomato sauce. since i don't have too much time on my hands i use canned tomatoes with garlic, basil and oregano already in it. i saute a bit of onion, add in about a 1/3 of the can of tomatoes and wait until it boils. after it has boiled a bit i crack an egg or two into the sauce pan and cover it with a lid. when the tostones are finished cooking the egg is just about perfect. i put it all into a bowl, and cover it with cilantro and add a side of fresh avocado.
i take it into the living room with a cup of coffee and enjoy every single bite.
and usually, just as i am eating the last bite, penelope can be heard in the baby monitor waking up and beatrix is ready to do something else.
it's an hour of pure enjoyment, from the start of the cooking process to scooping up the last little bit of tomato sauce with my delicious fried plantain.
if you are ever in the neighborhood stop over for brunch.
i'll be in the kitchen from 10 to 11.

Lydia, this is so delightful. I think photos of food is the next best after people...sometimes I like it even more.
